We love a good Anzac biscuit in our house after school or as a treat with our tea or coffee! We prefer the chewy type as opposed to the crunchy type. These ones are easy and delicious and all ingredients are available at The Green Heart Grocer. We even have the dry ingredients pre packed for you in one jar!! So low maintenance!
Ingredients (makes about 15 biscuits)
- 1 cup plain flour
- 1 cup rolled oats
- 3/4 cup desiccated coconut
- 3/4 cup coconut sugar or brown sugar (do less if you prefer not so sweet)
- 95ml olive oil
- 2T honey
- 1/2t bicarb
- 2T water
Preheat oven to 175 degrees celsius. Line baking tray with baking paper.
Mix all dry ingredients in a bowl (except bicarb).
Heat oil and honey in med saucepan or microwave till it bubbles. I do about 2mins in microwave (but keep an eye on it incase your microwave is more powerful!). Stir this. Add bicarb and mix well. It will froth a bit. Pour this into dry ingredients. Add water. Mix. Mixture will be sticky now:) (Add a little more water if balls are falling apart).
Roll into balls. Press a little on baking tray (not too flat). Leave a little space in-between as they expand a bit.
Bake 8 minutes. Cool on tray, or if too brown gently slide off tray onto wire rack. Be careful as they are soft till they set:)
