Lentil Burritos
I like simple, easy, nutritional meals & I don't like eating meat every night (much to the disgust of my partner!). I like to keep meal prep and cooking time to within 30 minutes so I can spend more time with my family.
The Green Heart Grocer stocks organic brown lentils as per request of a very good vegetarian customer. The brand we chose is Absolute Organic, a product of Italy. The lentils contain only a little salt (so I didn't need to add any extra when cooking) and are delicious.

Ingredients (I generally shop at The Organic Collective or Manna Wholefoods for fresh fruit & veg & bulk organic spices)
- 1 brown onion diced
- 2 teaspoons olive oil
- 1 clove garlic chopped finely
- 1/2 teaspoon ground cumin
- I carrot grated (I didn't bother peeling, just washed it)
- 1 celery stick
- 2 very large mushrooms or several small ones
- 1 x tin of lentils (From THE GREEN HEART GROCER - A pantry staple!!)
- 2 x tomatoes diced
Method
Heat olive oil in frypan. Add onion & garlic & cook till a little brown. While this is cooking grate the carrot and chop the celery finely.
Add cumin, carrot, celery and cook, stir occasionally
Meanwhile chop mushrooms finely and add to fry pan. Cook till soft
Finally add lentils (drain a little bit first... no need to completely drain) and heat.
Spoon the burrito mix on flatbread, or roti, or a wrap with a bit of yoghurt and diced tomatoes.
Can add grated cheese & avocado too if you like:)
